khaman dhokla Ingredients:
- 1 cup gram flour (besan)
- 1/4 cup semolina (sooji)
- 1 tablespoon lemon juice
- 1 teasppon baking soda
- 1 green chili, finely chopped (optional)
- 2 teaspoon sugar
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon eno fruit salt (you can find this at Indian grocery stores)
- 2 tablespoons oil
- 1 tablespoon mustard seeds
- A few curry leaves
- 2 tablespoons chopped coriander leaves
- Grated coconut for garnishing (optional)
- Chopped coriander leaves for garnishing
For Tempering:
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon sesame seeds
- 2-3 green chilies, slit lengthwise
Instructions:
- Prepare Batter:
- In a mixing bowl, combine gram flour, semolina,lemon juice, green chili, sugar, salt,baking soda and 2 tablespoons of oil. Mix well.
- Add water gradually to form a smooth batter. Ensure there are no lumps. The consistency should be like idli batter, neither too thick nor too thin.
- Steam the Batter:
- Grease a shallow dish or thali with oil.
- Heat water in a steamer or large pot.
- Once the water starts boiling, add eno fruit salt to the batter and mix gently. The batter will become frothy.
- Immediately pour the batter into the greased dish or thali.
- Place the dish or thali in the steamer and steam for about 15-20 minutes on medium heat, or until a toothpick inserted into the center comes out clean.
- Prepare Tempering:
- Heat 2 tablespoons of oil in a small pan.
- Add mustard seeds and let them crackle.
- Then add sesame seeds, asafoetida, and slit green chilies. Fry for a few seconds.
- Turn off the heat and keep aside.
- Cut and Serve:
- Once the khaman is steamed, let it cool for a few minutes.
- Cut the khaman into square or diamond-shaped pieces.
- Drizzle the prepared tempering evenly over the khaman.
- Garnish with chopped coriander leaves and grated coconut if using.
- Serve khaman warm with green chutney or tamarind chutney.
